Zucchini Pizzas!

So, I have been pinning lots of ideas for zucchini.  I love eating it, but usually just put it on my roasted veggie sandwich.  I had some leftover this week and decided to create my own zucchini snack.  These were delicious!

I am currently doing Weight Watchers on-line to lose the last of this baby weight, and these were an easy two point snack!

I cut the zucchini into little rounds and put them on aluminum foil on a baking sheet.  I sprinkled them with salt.  Next, I put a little bit of marinara on each round. (Total: 1/8 cup of marinara).  Then I sprinkled mozzarella cheese on each one (Total: 1/3 cup of mozzarella cheese).  Then I put them in the oven on 450 (it really hadn't heated up all the way, but I was anxious).  They stayed for about 4 minutes then I switched it over to broil for a minute or less.  They came out great and were the perfect bite-size snack!

fitness friday: Weight Watchers

I have been very fortunate for the last year or so, in that I have been pretty much able to eat whatever I want whenever I want (except for a few months with morning sickness, and then not being able to eat dairy)...

Now that is starting to change!  I have slowly started gaining back some weight after giving birth to Baby W 7 1/2 months ago!  So, I am resorting to what has always worked for me in the past and that is Weight Watchers!  I am not going to go to the meetings, but I still have all my little booklets and points finders, and I will be calculating each step of the way!


Weight Watchers is a  great plan that really teaches you how to control your portions without ridding your diet of any specific things!  I can still drink an occasional Mountain Dew and eat what I want as long as I count it!  You also get extra eating points for working out...so it gives you motivation to get moving!

If you are a nursing mother, they have a plan for you as well!  If you have never done WW before, and you are looking for a way to shed some pounds, I would recommend attending a meeting or two to try it out! You can also join on-line which is nice to keep up with your points!


I will do my best to keep you updated with my results...but I'm not revealing my starting weight.  I will say that my goal is to lose 9 pounds, and that will probably take me 4 months if I lose 1/2 a pound to a pound per week.
